Boys & Girls Club

Every week I teach the Fruits & Vegetables Cooking Club at the Santa Monica Boys & Girls Club. We are nearing the start of our 4th year, and we are raising money for an abundant program. My goal is to raise $10,000 for the Boys & Girls Club because our team is devoted to healthy nutrition programs for children. We focus on a fruit or vegetable that is seasonal and delicious, and then make a simple, savory recipe! All of our no-cook creations are cheap, easy, and delicious and the students deserve healthy cooking classes with the highest quality of fresh foods! 

We like to make lots of smoothies and fresh salads. We cook gluten-free and refined sugar-free meals! We also love using olive oil and honey. And each week we have a fun together. The association of fun & healthy cooking is the magic of my St. Anne's Powerfoods Class.

Here's a fun summer recipe we love! 

Summertime Bean Salad
1 can black beans, drained
1 can garbanzo beans, drained
1 red bell pepper, chopped
1 tomato, chopped
1 can artichokes
1 red onion, chopped

Dressing:
1 1/2 cups olive oil 
1/2 cup lemon juice
1 tablespoon dijon mustard
2 cloves crushed garlic

Preparation:
Combine all Bean Salad ingredients in a large mixing bowl. Make the dressing separately by adding all ingredients to a blender and blending on high. Pour dressing over Bean Salad and mix with big wooden spoons like the kids!
